Lunch Salad

For lunch every day we have some kind of salad and this salad recipe is the one we make the most.  It’s filling and versatile and easy to prepare a whole week’s worth for both Cameron and me so that way we only spend about 1 hour per week on meal prep for it instead of 30 minutes everyday.

Ingredients

2 cups Romaine Lettuce (chopped)
2 each Baby Carrots
1⁄4 cup Broccoli Florets
1⁄4 cup Cauliflower
1 stalk Celery
6 each Cherry Tomatoes
1⁄4 each Cucumber (Large)
1/4 cup Bubbies Sauerkraut (or homemade sauerkraut)
1 Tbsp Olive Oil
1⁄2 each Lemon (juice of, but leave out if it’s too sour at first)
Himalayan salt (to taste)
Pepper (to taste)
2 oz Guacamole (homemade, or fresh avocado)

Makes 1 serving

Instructions

Once a week I prepare our lunch salads for the whole week. Currently they consist of Romaine lettuce which we do salad in a jar method.

Then I grate 2 baby carrots, ¼ cup broccoli, and ¼ cup cauliflower in my food processor and I slice 1 stalk of celery in my food processor.

I put these 4 grated and sliced veggies into zip lock bags and add about 6 cherry tomatoes and peeled and sliced cucumbers (I’ll peel, slice and add the cucumbers each day so they don’t get mushy; about ¼ of a large cucumber to each bag).

The sauerkraut dressing is in the small square container and my homemade guacamole is in the small 2 ounce plastic disposable container in the photo.

I multiplied all of this by 14 so Cameron and I have grab and go salads for the whole week.

For the dressing, I use Bubbies brand sauerkraut (or make my own) which sometimes I blend in my Vitamix blender so it’s more like a puree. Then I add the Olive Oil and the juice of 1/2 lemon, Himalayan salt and pepper to taste. Sometimes we keep the sauerkraut as is, instead of blending it, and leave out the lemon if it’s too sour. Either way, this serves as our salad dressing along with the guacamole and it’s really quite delicious on our salads. We each get 1 cup of sauerkraut per salad.

When I’m ready to eat my salad, I put everything in a big tupperware container, put the lid on tight, and shake it up so it gets mixed well.

Tip: Sometimes I’ll add my meat to it as well, like baked salmon, ground beef or ground turkey or sliced chicken breast. Very tasty and healthy.
