Baked Dijon Salmon

This is a super easy yet very tasty meal that my husband Cameron makes for us.  I don’t know what he does to it but he puts some kind of magic in it because it is always so delicious.

Ingredients

6 Wild Salmon fillets (about 7 oz each)
1⁄2 TBSP Parsley , dried
1⁄2 TBSP Rosemary , dried
1⁄2 TBSP Thyme , dried
6 TBSP Dijon mustard (no sugar or artificial sweeteners)
6 tsp expeller-pressed coconut oil
1⁄4 tsp Himalayan salt
1⁄4 tsp Black Pepper
Coconut oil cooking spray

Makes 6 servings

Instructions

Preheat oven to 400° F. (We like to use the oven and bake our food A LOT so that we can be reading with kids, helping them do their homework or piano while dinner is cooking rather than slaving over the stove the whole time.  It’s all about time efficiency in our household…)

Lay out salmon fillets in a baking pan spray with Coconut oil cooking spray .

Spread 1 Tbsp of Dijon mustard on each fillet.

Put 1 tsp. of expeller-pressed coconut oil on top of each fillet.

Mix all the spices together in a small bowl and sprinkle evenly on each fillet.

Bake uncovered for 15 minutes on the middle oven rack at 400° F.

Serve with steamed veggies of your choice season with expeller-pressed coconut oil, Himalayan salt, pepper and any other herbs and spices that you like (just make sure to read the labels to make sure they are sugar-free and preservative free.)

Enjoy!

Tip: You could also eat this as lettuce wraps or add to salad.
