Turkey “Stuffed” Peppers

You know how you see recipes of turkey stuffed peppers and they always look so good?  Well, I made them but my kids wouldn’t eat the bell pepper.  They would just eat the meat part.  So in order to get my kids to eat more veggies, instead of stuffing the peppers, I minced them and added them to the ground turkey.  This way my kids loved it and got their veggies.  This is my extremely picky 5 year old’s favorite meal.  Score!

Ingredients

1 Tbsp expeller-pressed coconut oil
3 large sweet red bell peppers minced
1⁄4 yellow sweet onion minced
1 garlic clove minced
1 lb ground turkey
1 tsp garlic powder
1 tsp cumin powder
1/2 tsp Himalayan salt
1 cup organic chicken stock
1⁄4 cup tomato sauce
1/2 bunch chopped fresh cilantro
12 large lettuce leaves Bibb or Green Leaf

Makes 6 servings

Instructions

Melt coconut oil in a medium size saute pan and heat on a medium flame.

Add onion, garlic, chopped bell peppers. Saute about 10 minutes until soft.

And add ground turkey and brown while mixing well with the bell pepper mixture.

Season with salt and garlic powder, and cumin and brown meat for several minutes until meat is completely cooked through.

Add tomato sauce and chicken stock, mix well and simmer on low for about 5 minutes.

Add cilantro to the pan. Saute about 2 minutes.

Spoon into lettuce leaves.

Enjoy!

Tip: This is a great over a salad of Romaine lettuce, shredded cabbage, tomatoes, Himalayan salt, pepper or as lettuce wraps.  You could also use ground beef or ground chicken instead of turkey for this recipe.
