Dutch Oven Cauliflower Chicken Chowder

I always love a good chowder and so do my kids. Chowder makes great freezer meals and I love the one pot meal idea to save time and get veggies into my kids’ bellies. This Dutch Oven Cauliflower Chicken Chowder fits the bill for all of these things and is absolutely delicious!

Ingredients

1 pound skinless and boneless chicken breasts, cut into bite size pieces
4 cups cauliflower florets
2 celery stalks, chopped
3 medium carrots, chopped
1 medium sweet yellow onion, chopped
4 cups organic chicken stock, or homemade
1 cup organic full fat unsweetened coconut milk
4 turkey bacon slices, nitrate and sugar free, I like Applegate Organics uncured turkey bacon
1 bay leaf
2 tbsp expeller-pressed coconut oil
1 tsp Himalayan salt, to taste
1/2 tsp pepper, to taste

Makes 4 servings

Instructions

In a large Dutch Oven or pan, heat the expeller-pressed coconut oil over medium heat.

Add the chopped onion and cook for 5 minutes.

Add the chicken and brown it.

Add the chopped celery, carrots, cauliflower florets and mix.

Add the chicken stock, coconut milk and bay leaf. Mix and bring to a boil.

Reduce heat to low, cover and simmer for an hour.

A few minutes before the soup is done simmering, heat frying pan over medium heat. Add a little expeller-pressed coconut oil and the turkey bacon slices and cook until crisp. Remove from the heat, crumble the bacon and set aside.

Remove the chowder from the heat and add Himalayan salt and pepper to taste.

Ladle chowder into bowls, top with crumbled bacon and serve.

Tip: You can load up on bacon and freeze it. Then a day or two before you want to use it, transfer it to your fridge to defrost. Mine only took 24 hrs to defrost in the fridge.

Also, double the recipe and make a freezer meal. It doesn’t take much more time to double it up and it saves repeating everything when you want to eat it again. This way you can put it in gallon zipper freezer bags (I use two for extra protection), labeled with the date and contents.  Transfer it to the fridge to defrost a couple of days before you’re ready eat it then heat it up quick and enjoy!
