Breakfast Casserole

I’ve always struggled to come up with healthy breakfast options that included enough protein, especially since I’m not a big fan of eggs.  But since my husband, Cameron, and I came up with this idea of the healthy breakfast casserole and then added my homemade guacamole to it, I love eating breakfast every morning and never get sick of it.  I hope you enjoy it as much as we do!

Ingredients

2 cups mushrooms, diced small
1 cup onion, diced small
1 cup bell peppers, yellow, red, orange
24 Large Eggs
1/2 lb ground beef
1/2 lb ground turkey
1/2 tsp himalayan salt, to taste
1/2 tsp pepper, to taste
1 Tbsp expeller-pressed coconut oil, melted

Makes 16 servings

Instructions

Preheat over to 325° F.

Brown the ground meat in skillet, chopping it up small as it browns.

Dice mushrooms, bell peppers and onions (and any other veggies you want) in food processor.

In a large bowl (or Vitamix blender on low) beat eggs. Add salt, pepper, browned ground meat, diced veggies you like (mushrooms, onions, tomatoes, bell peppers, spinach) and stir until mixed well.

Pour into a greased (with expeller pressed coconut oil) 13-in. x 9-in. baking dish. Bake, uncovered, at 325° F for 60 minutes or until knife inserted near the center comes out clean. Let stand for 5 minutes.

Serve with homemade guacamole (optional).

Tip: Cut into 16 portions after cooking. Place each portion into a sandwich ziplock bag or in small tupperware container with homemade guacamole for grab and go. Store in the fridge for quick breakfasts on the go for the week.

Also, if you double or even quadruple the beef and veggies and cook all of those up, you can freeze into one week portions in gallon zipper freezer bags for the next week’s (or next 3 weeks’) breakfast casserole. So all you have to do is take the mixture out of the freezer a few days before to defrost, or defrost by putting the bag in hot water, then beat the eggs and add the mixture to the eggs and bake.
